MY KURAMO BAR BEACH EXPERIENCE IN LAGOS

Lagos is a land of opportunity with milk and honey, a land with the good, the bad and the ugly. Lagos experience will either make or break you in a positive or negative light. I've had my share of experiences in Lagos but my first Lagos experience I will never forget in a hurry was between 2002- 2003 my first or second time in Lagos. My then-boyfriend arrived in Nigeria from Italy, he's a Nigerian though and in his usual manner, I have to be in Lagos to receive him at the airport before we will then proceed to PH our base. He arrived before 10 pm we proceeded to our hotel at else Femi Pearse in Victoria island off Adeola odeku street and he wanted to eat fish pepper soup and they directed us to the former Kuramo beach before it was converted to the current EKO Atlantic. I was already complaining about how rough the environment looked and we had barely sat down when we noticed people started running😂😂😂🤣🤣 Ha mogbe! What will I tell my folks I was doing in Lagos when I'm supposed to be in school? we started running back and forth like headless chicken without direction with the crowd for over an hour until it seems like everywhere was calm and we decide to leave as soon as we got out of the gate unknown to us police van is parked outside the gate waiting for anyone that comes out , As we came of the gate police flashlight directed us to go into the bus in front of the gate they have been arresting people due to insistent fight at the beach by the different rival cult group. I was laughing because it was funny. My boyfriend was scared they would manhandle me because I was laughing. He then asked to speak to one of the police who obliged and he explained how he just got back into the country and needed to eat fish and was directed here. anyway they asked to see his passport which coincidentally he had with the ticket and they requested money and he gave them that's how we were allowed to leave. It's a story I will never forget in a hurry. Hence I haven't gone to certain places since I moved to Lagos because i no want to hear them say shoot bird the mama dey for police station dey think of how to bail am. A DELICIOUS NUTRITIOUS BREAKFAST: BANANA AND EGG PANCAKE RECIPE

 I woke up this morning and was craving Pancakes. I noticed I was out of supply and decided to improvise. As you all know food is an art and should be continuously experimented upon. Looked through the fridge and noticed I had some leftover bananas in the fridge and thought to myself? Why not try a new recipe for pancakes? You've probably eaten pancakes, but have you tried these two-ingredients, no flour, no added sugar, sweet and healthy banana pancakes? These are super easy to make and will work great for toddlers.

  Ingredients: 

 - 2 piece Banana
 - 1 piece Egg 
 - Butter 

 Preparation Time:15 Minutes 

 - Mash up bananas until smooth in a large bowl.
 - Whisk eggs (using a fork is just fine!) and add to banana paste
 - Fry gently in a pan on low-medium heat with a little heated oil or butter 
-Leave to cook on low heat to turn golden brown for about 10 minutes and viola food is ready.
 - You can have these pancakes with any other fruit of your choice such as grapefruit, apples, pineapples.

Banana and two eggs will knock up a brilliant breakfast for one person and one that’s full of vitamin b6. which is normally found in fish and meat they're also full of manganese which is used for bone production, skin integrity and for blood sugar control. A Delicious And Creamy Pasta Recipe With Shredded Beef And Shrimp.

INGREDIENTS CREAMY PASTA RECIPE WITH SHREDDED BEEF & SHRIMPS
 - Shrimps 
- Shredded beef 
 - Tea spoons Vegetable oil
 - Tea spoons butter 
- Tea spoon blended yellow pepper 
- Teaspoon salt - Pound spaghetti 
- cup heavy cream 
- Maggi
 -  ½ tablespoons dried parsley
PREPARATION CREAMY PASTA RECIPE WITH SHREDDED BEEF & SHRIMPS
 - -Parboil Spaghetti and sieve out the water place in a plate - wash and Steam the shredded beef with seasons for 1 minute with low heat. - wash and Steam shrimps with seasoning for 1 second with low heat _ Heat oil in a medium non- sticky pan over medium heat. _ Add garlic, onions, fresh yellow pepper and salt stir until fragrant, for 2 minutes. - Add butter and stir constantly until melted.

ONUNU AND FISH PEPPERSOUP: A TRADITIONAL NIGERIAN FOOD FROM NIGER DELTA

Onunu is a popular Indigenous delicacy among  the Southern part of Nigeria. It’s a special traditional delicacy served during traditional wedding ceremonies among the Kalabari and Okirika people of Rivers state, Nigeria. The delicacy is locally called Temburu it involves pounding a mixture of yam with ripe plantain and palm oil with a pinch of salt. The delicacy is served with fresh fish pepper-soup traditionally called Odufulo.

BOLE AND FISH: FOOD DELICACY FROM THE NIGERDELTA REGION OF NIGERIA

Plantain & fish;popularly know as Bole and fish originates from rivers state, Port Harcourt to be precise the southern part of Nigeria.  You will find Bole and fish on every road side in the garden city of Port Court. Bole is very popular in this part of the world. It is usually sold on the roadside on locally made grills. Now this is a recipe for you to make in the comfort of your kitchen. 

Ingredients Bole and Fish:

Chopped

Peppered Fish: Titus Fish

Fresh pepper (Blended)

Onions (chopped)

Garlic

Seasoning cubes

Salt to taste

Palm oil

Bole

Plantains (Slightly or unripe)

Peppered Fish:

 

Preparation Bole and Fish:

- Properly clean fish and wash well. If you are using a fish that has scales, properly remove the scales, rinse well and set aside.

- Mix all the ingredients except the fish in bowl

- Place the fish on a large quantity of foil paper. Make some slices on the body of the fish for the marinade to penetrate the fish both inside and outside

- spread the marinade on the fish generously both in and out. Cover the fish with the foil paper and place in the fridge for about 20 minutes

- Preheat the grill on medium heat while the fish marinates in the fridge.

-  Place the fish on the grill and cook for 2 minutes each for both sides

-  Heat little palm oil. Once hot, add the onions, seasoning cubes, salt, pepper and leave to fry for 2 minutes.

-  Add the grilled fish to the pepper sauce. Let the pepper penetrate every part of the fish. Set aside when it is ready.


Bole and Fish :

Preheat the grill. Remove the plantain skin and place on the grill. Grill plantain for about 2 minutes turning at intervals. Ready to serve with fish and peppered sauce.

BUDGET FRIENDLY CRAB MEAT VEGETABLE SAUCE RECIPE

As a food & Lifestyle enthusiast I love to play with new recipes and as such I decided to give my taste bud craving something different from the usual (Edikikong Soup). Known as the crab meat vegetable sauce, although they share almost the same ingredients.
This crab meat vegetable sauce is easy to cook, filled with mouthwatering fresh seafood with vibrant colors and a lot of healthy and nutritious vibe that can be eaten with rice, yam, plantains, potatoes, Eba, or any swallow of your choice.

                                            INGREDIENTS FOR CRAB MEAT  VEGETABLE SAUCE

ngredients for crab meat  Vegetable Sauce recipe

 Fresh Shrimps

Fresh Tomatoes

Ginger

Onions

crayfish

Palm Oil

Maggi Cubes

scotch bonnet yellow peppers

 400ml Palm oil

2 seasoning cubes

 Ugu leaves (fluted pumpkin)

Crab meat

 Periwinkles


                                                   
                      CRAB MEAT VEGETABLE SAUCE READY

Preparation  Crab Meat Vegetable sauce

Wash and Slice  pumpkin leaves with a kitchen knife, you want them thinly sliced to your desired size.

Clean and wash crab meat with seasonings and ginger then steam for 1 minute with low heat.   Clean shrimps and steam with seasoning and ginger then steam for 1 minute with low heat. Wash periwinkle and steam for 2 minutes with low heat.

Wash and blend scotch bonnet yellow peppers with Crayfish.

  Wash and chop onions to desired size

Wash and chop tomatoes to your desired size.


How to Cook Crab Meat Vegetable Sauce

Preheat palm oil for a bit and add your onion and tomatoes.

Allow to cook 20 seconds

Add all your already pre cooked ingredients for 20 seconds so as not to overcook.

Add your blended pepper and crayfish.

 Add 1 Maggi seasoning cube and check for taste.

Add vegetables and stir and let your vegetables cook for 5 seconds to avoid over cooking.
